We’ve seen it done before and we are never happy with the result. It definitely looks like you placed a bridesmaid bouquet on the table- you aren’t going to fool anyone into thinking it’s a centerpiece. And sometimes your bridesmaids don’t take the best care of their bouquets soooo, it’s best to have centerpieces already in place and to let your bridesmaids do what they want with their bouquets.
